Since I live in Arizona, I am always looking for cool recipes for the summer. I came up with my fantasy, chocolate chip cookie crust with butter pecan ice cream pie. Think of all the possibilities, so many possible combinations. You can make your ingredients from scratch or do what I did. I bought all the parts and put it together. I picked my ingredients, because they are my favorite. You will be able to do the same thing.
1 package of cookie dough(24 pcs)
1 48oz container of Butter Pecan Ice Cream
1 container of chocolate syrup
1 container of caramel syrup
1 container of Reddi Whip
¼ – ½ C. of chopped pecans
The first thing to do is set out the dough to warm up to room temperature. Once it is soft, press the dough into a pie pan to form the crust. You bake the crust until it is done (about 20 minutes) and then cool. When you take out the crust also set out the ice cream so that it will soften. Once the crust is cool, spoon in the ice cream. Don’t over fill the crust, there should be ice cream left. The next step is to freeze the pie for at least 2 hours. Because I had cookie dough left over, I made some indivdual ones, that would be perfect for a party. Before you serve, complete the decoration. Decorate the entire pie with Reddi Whip, sprinkle with the chopped nuts and drizzle with the syrups.
* After making the pie and trying to cut it, I am revising the instructions. The best thing to do is cut the crust into serving wedges before adding the ice cream and freezing. The crust will tell you where to cut and it is much easier, once it is frozen and decorated.
As I said before the possibilities are endless; lemon cookie crust with sherbet, Oreo cookie crust with chocolate ice cream or how about a fudge brownie crust with peppermint ice cream. I challenge you to come up with your best or weirdest combo.
